✅ Ingredients

For the Meat Sauce

  • 1 lb (450g) ground beef
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 1 cup sugar-free marinara sauce
  • 2 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp paprika

For the Layers (Pasta Substitute)

  • 2 medium zucchini (thin sliced lengthwise)
    OR keto cheese sheets

Cheese Mixture

  • 1 cup ricotta cheese
  • 1 egg
  • ½ cup grated parmesan cheese
  • 1½ cups shredded mozzarella cheese

Top Layer

  • 1 cup mozzarella cheese
  • Fresh parsley (optional garnish)

1️⃣ Prepare Meat Sauce

  1. Heat olive oil in a pan on medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add ground beef and cook until browned.
  4. Mix in marinara sauce, tomato paste, and seasonings.
  5. Simmer for 8–10 minutes until thick.

2️⃣ Prepare Cheese Filling

  • In a bowl, mix ricotta, egg, and parmesan cheese until creamy.

3️⃣ Assemble Lasagna

  1. Grease a baking dish.
  2. Add a thin layer of meat sauce.
  3. Place zucchini slices (or cheese layer).
  4. Spread ricotta mixture.
  5. Add meat sauce + mozzarella.
  6. Repeat layers 2–3 times.

4️⃣ Bake

  • Bake at 375°F (190°C) for 30–35 minutes until cheese is bubbly and golden.
