For the Meat Sauce
- 1 lb (450g) ground beef
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 small onion (finely chopped)
- 1 cup sugar-free marinara sauce
- 2 tbsp tomato paste
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- ½ tsp paprika
For the Layers (Pasta Substitute)
- 2 medium zucchini (thin sliced lengthwise)

Cheese Mixture
- 1 cup ricotta cheese
- 1 egg
- ½ cup grated parmesan cheese
- 1½ cups shredded mozzarella cheese
Top Layer
- 1 cup mozzarella cheese
- Fresh parsley (optional garnish)
👩🍳 Instructions
1️⃣ Prepare Meat Sauce
- Heat olive oil in a pan on medium heat.
- Add onion and garlic, sauté until soft.
- Add ground beef and cook until browned.
- Mix in marinara sauce, tomato paste, and seasonings.
- Simmer for 8–10 minutes until thick.
2️⃣ Prepare Cheese Filling
- In a bowl, mix ricotta, egg, and parmesan cheese until creamy.
3️⃣ Assemble Lasagna
- Grease a baking dish.
- Add a thin layer of meat sauce.
- Place zucchini slices (or cheese layer).
- Spread ricotta mixture.
- Add meat sauce + mozzarella.
- Repeat layers 2–3 times.
4️⃣ Bake
- Bake at 375°F (190°C) for 30–35 minutes until cheese is bubbly and golden.
5️⃣ Rest & Serve
- Let rest for 10 minutes before cutting (helps layers stay firm).
