  • 2½ cups cooked chicken (grilled, roasted, or boiled & shredded)
  • 1 cup cauliflower rice (fresh or frozen, squeezed dry)
  • 1 cup heavy cream
  • ½ cup cream cheese (softened)
  • 1½ cups cheddar cheese, shredded
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Optional: chopped chives or parsley

🍳 Instructions

  1. Preheat oven to 180°C / 350°F.
  2. Lightly grease a baking dish with butter.
  3. In a pan on low heat:
    • Melt butter
    • Add garlic, sauté 30 seconds
    • Add heavy cream + cream cheese
    • Stir until smooth and creamy
  4. Add:
    • Salt, pepper, paprika, garlic powder
    • Cauliflower rice
    • Cook 2–3 minutes (do not overcook)
  5. Add cooked chicken, mix well.
  6. Transfer mixture to baking dish.
  7. Top with shredded cheddar cheese.
