📝 Ingredients (Keto-Friendly)
- 2½ cups cooked chicken (grilled, roasted, or boiled & shredded)
- 1 cup cauliflower rice (fresh or frozen, squeezed dry)
- 1 cup heavy cream
- ½ cup cream cheese (softened)
- 1½ cups cheddar cheese, shredded
- 2 tbsp butter
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp garlic powder
- Optional: chopped chives or parsley
🍳 Instructions
- Preheat oven to 180°C / 350°F.
- Lightly grease a baking dish with butter.
- In a pan on low heat:
- Melt butter
- Add garlic, sauté 30 seconds
- Add heavy cream + cream cheese
- Stir until smooth and creamy
- Add:
- Salt, pepper, paprika, garlic powder
- Cauliflower rice
- Cook 2–3 minutes (do not overcook)
- Add cooked chicken, mix well.
- Transfer mixture to baking dish.
- Top with shredded cheddar cheese.
- Bake uncovered for 15–20 minutes until cheese is bubbly and golden.
- Rest 5 minutes, garnish with chives.
