๐ Ingredients
- 2 cups heavy cream
- ยฝ cup full-fat milk (or almond milk for lower carbs)
- 3 egg yolks
- 3โ4 tbsp erythritol / monk fruit sweetener (to taste)
- 1 tsp vanilla essence
- 1 tbsp unsalted butter
- ยฝ tsp gelatin powder (optional but gives perfect set)
- 1 tbsp warm water (for gelatin)
- Optional (as seen in image):
- 1 tbsp chia seeds OR
- Finely chopped nuts (almonds/walnuts โ very small amount)
๐ณ Instructions
- Bloom gelatin
- Mix gelatin with warm water
- Let sit 2โ3 minutes
- Heat cream mixture
- In a pan, add heavy cream + milk
- Heat on low flame (do not boil)
- Egg mixture
- In a bowl, whisk egg yolks + sweetener
- Slowly add warm cream while whisking (to avoid scrambling)
- Cook custard
- Return mixture to pan
- Cook on very low heat, stirring continuously
- Cook until slightly thick (5โ7 minutes)
- Finish
- Turn off heat
- Add butter, vanilla & gelatin
- Stir until smooth
- Add chia seeds or nuts if using
- Chill
- Pour into serving glasses
- Refrigerate 2โ3 hours until set
